Lemon Blueberry Parfait with Homemade Blueberry Sauce

 
 

Ingredients:

1 ½ cups fresh Consalo Family Farms blueberries

1 ½ tablespoons homemade blueberry sauce

1 ½ cups heavy cream

½ tsp vanilla extract

2 tbsp confectioners sugar

1 cup lemon curd

Fresh Consalo Family Farms mint

Instructions:

  1. Place 1 ½ cups blueberries in a small saucepan. 

  2. Cover with water and add sugar and vanilla. 

  3. Heat over medium-high heat until mixture comes to a low boil and blueberries just start to break apart.

  4. Add dissolved cornstarch to saucepan and bring mixture to a rolling boil. 

  5. Turn heat down and simmer on low heat for 2-3 minutes. 

  6. Remove from heat. Add remaining blueberries and stir gently.

  7. Beat cream in a large bowl with an electric mixer until frothy. Add vanilla extract and sugar gradually, continuing to beat on low speed until soft peaks form. Increase speed and beat until stiff peaks form, about 2 minutes.

  8. Spoon equal layers of lemon curd, followed by blueberry sauce, and whipped cream in small dessert glasses. Repeat this layering one more time, and garnish with fresh blueberries and a sprig of mint.

  9. Move glasses to the fridge to chill and serve.
