Description:

A yam is actually a rough, scaly, edible root. The traditional ‘yam’ that most people think of as a sweet potato got its name from the African word nyami. The flesh of a sweet potato varies from white to orange to purple. The word yam distinguishes the orange potato. The orange variety of sweet potatoes is the sweetest.

Recent studies have shown that yams raise the blood level of vitamin A in a superior way. Steaming or boiling a sweet potato provides the best form of nutrient extraction. Cooked sweet potatoes are high in fiber.

Temperature:Yams do not need to be kept cold. 50-60 degrees is a sufficient storage temperature.
