Bok Choy

Bok choy is known as a non-heading cabbage and has a similar appearance to collard greens. Bok choy is sometimes referred to as white cabbage. It has translucent white stalks that join above the root. The leaves of bok choy are the most tender part of the plant. Bok choy is available year-round but is at its best in the winter.
 
Bok choy is a popular, very low-calorie leafy vegetable.  It is one of the recommended vegetables for weight loss programs because it adds no extra calories into the body but facilitates calorie burn. Beta-carotene levels in bok choy are high enough for the vegetable to be highly recommended by the Macular Degeneration Association. In fact, a single cup of bok choy contains the entire daily recommendation of beta-carotene, which has been shown to prevent night blindness and possibly reduce the risk of cataracts and macular degeneration.
