Anise

Description:

Commonly known in its raw form as fennel, anise has a very pale, almost white bulb with superimposed stalks. These stalks have feathery green leaves. The entire vegetable is edible. It is closely related to parsley and dill. Fennel can grow from three feet to ten feet tall. It has a sweet, licorice-like flavor.

Histidine, an amino acid found in fennel is helpful for the treatment of anemia. In other cultures, people chew fennel seed after meals to assist with digestion. Fennel has also been known to regulate hormones.
